Huckleberry Crisp

As per usual, I haven’t accomplished as much this year as I’d hoped/planned/intended, but one thing I did do was settle on a recipe for huckleberry crisp that I’m happy with. Mr. K and I pick lots and lots of huckleberries on the mountain when they’re in season and freeze most of them so we can eat them year ’round. Often we have them on their own with cream, and sometimes I put them in pancakes or take them to the pie shop in town and have them make us a pie, but I wanted to have something I could make at home that featured the berries and could be served to guests at non-breakfast meals (handing folks a mug of still mostly frozen berries and a carton of cream seems a bit lazy, not that I haven’t done just that).

I unfortunately don’t remember what online recipe I started with, just that what I ended up with has less sugar in the filling and more granola in the topping and the minimum number of ingredients needed to achieve the crisp I had in my mind when I started . Each time I made it, I scribbled notes on the piece of paper I’d written the recipe on until there were no more changes. For Thanksgiving, I felt confident enough in it that I doubled the recipe and made a big crisp to take to Kathy’s house for the family celebration.

Filling:
4 cups frozen huckleberries, rinsed and drained
1/2 cup white granulated sugar
1/3 cup white flour

Topping:
1 and 1/2 cups rolled oats
1/2 cup granola (I usually use Nature’s Path Coconut Chia)
1/2 cup brown sugar
1/2 teaspoon cinnamon (or Penzey’s Pie Spice)
6 tablespoons butter, melted

Grease 9 x 9 inch square glass baking dish. Mix filling ingredients and put in baking dish, spreading evenly. Mix topping ingredients and spread over filling in dish, patting gently to compress. Bake at 350 degrees F for 40 to 50 minutes, until topping is browned and filling is bubbly.
